Mediterranean diet: benefits

A flexible blueprint for healthy eating
Rather than specifying a strict diet, this research shows that a flexible healthy eating pattern—no matter what it is called—can promote good health. Here are the guidelines that the volunteers in PREDIMED’s Mediterranean groups were given:
- olive oil: use abundantly for cooking and dressing dishes
- vegetables: at least two to three servings
- fruits: at least two to three daily servings
- beans: three or more weekly servings
- fish or seafood: three or more weekly servings
- nuts or seeds: at least one serving a week
- choose poultry instead of red meats or processed meats
- cook at least twice a week with tomato, garlic, and onion
- moderate alcohol intake (for those who drink alcohol)
- eat as desired: nuts, eggs, fish or seafood, low-fat cheese, chocolate (only black chocolate, with more than 50% cocoa), and whole-grain cereals.
- limit or eliminate: cream, butter, margarine, red meat, sugared beverages, pastries, bakery products (such as cakes, donuts, or cookies), premade sweets and desserts, French fries or potato chips, cured or fatty cheeses.

Caramelized Apricots with Goat Cheese and Pistachios
Ingredients
5 apricots, halved {not too ripe, firm to touch}
5 tsp brown sugar
5 tbsp cream cheese, room temperature
3 tbsp soft goat cheese, room temperature
2 tbsp pistachios, chopped
1 tbsp honey
1. Turn the oven to broil {500 F}. Move the oven rack to the top shelf.
2. Wash, then cut the apricots in half and place them on a baking sheet.
3. Sprinkle the tops with 1/2 tsp of brown sugar. and broil for 10 - 15 minutes. The brown sugar should caramelize and turn light brown.
4. In a small bowl, mix the cream cheese and goat cheese, with a fork or whisk.
5. When the apricots have cooked, remove them from the oven. Place a dollop of the cheese mixture on top of each apricot, followed by a tsp of chopped pistachios, and then drizzle with honey. Serve warm.

Health tip: order your sushi with brown rice....same great taste but without the unhealthy simple sugars. Try using low sodium soy sauce instead too!

I think everyone can agree that Mondays simply suck. What are ways to start off your week right? try hitting the gym and eating healthy. Beginning your week in a positive way will surely make Friday come sooner. With only one week left until the Bahamas I was sure to get back on schedule with my eating habits and workouts. After class I ran a nice 4 miles with some cycling and abs. A mixed cardio workout can never hurt. My post workout lunch included a Chobani and fresh salad with quinoa. Greek yogurt and quinoa are a fantastic source of protein! Of course I indulged with with my morning iced coffee too. Make sure to drink lots of water, especially after your long weekend! I make sure to carry bottled water with me everywhere I go. It even helps you feel more full and keeps you from picking throughout the day!
